This Almond Butter Pink Beet Smoothie is our new favorite grab-and-go meal option, and we can’t get enough.

There’s no debating that beets are good for us, but we also know that they aren’t the easiest to incorporate into our diets. So how do you break the mold, and start reaping the benefits of beets today? Try something easy and delicious like the Almond Butter Pink Beet Smoothie.

Healthy Hack

We’re big fans of finding ways to minimalize waste in our kitchen. From recycling to composting to cutting back on single-use plastics. We do our best, but we’re not perfect. That can be said about the contents of our refrigerator as well.

Sometimes that Zucchini or head of cauliflower we purchased last week gets overlooked on batch cooking day and is starting to look a little droopy. Don’t worry! Just pop those seemingly sad veggies in the freezer to incorporate into future mealtime smoothies. The vegetables will taste perfectly fine, and by freezing them, you get a boost of health benefits instead of just using ice.

Beets are great to incorporate into our diets for anti-inflammatory and detoxification benefits. They have also been shown to lower high blood pressure and improve both digestive health and athletic performance. The Recipe

Ingredients

1 scoop vanilla protein powder

2 cups almond milk

1-2 steamed or roasted medium beets

2 tablespoons almond butter/cashew butter

1/2 cup frozen chopped zucchini or cauliflower

juice of half a lemon (about 2 tablespoons juice)

Directions

 Simply combine all the ingredients in a Vitamix blender and blend until thick and creamy. You may adjust for your desired thickness by adding ice or removing liquid — the opposite is true if you prefer it thinner.
